- 4 eggs 2-3 medium potatoes
- Extra virgin olive oil
- Salt to taste
- Optional: Serrano ham or bacon cut into small pieces
- Optional: Peppers or onions cut into thin strips
Instructions:
- Peel the potatoes and cut them into thin slices or small pieces, according to your preference. In a large skillet, heat a generous amount of olive oil over medium-high heat.
- Add the potatoes and fry them until golden and crispy on the outside and tender on the inside. This will take about 10-15 minutes.

- Once the eggs are cooked to your liking, place the fried potatoes on a large plate or individual plates. Place the fried eggs over the potatoes, being careful not to break the yolks. Season with salt to taste and serve hot, allowing the yolks to mix with the potatoes for a blend of flavors and textures.
- And that’s it! Now you can enjoy some delicious homemade broken eggs. You can serve them with crispy bread or a fresh salad if desired. Enjoy your meal!
